Christmas 2018 took the Ashton Mitchell team to the very scenic Brick Bay Winery, located in Snells Beach near Matakana. Despite the concerns over an initial weather scare, the bus drove through the rain and arrived in sunshine, shimmering on the Brick Bay winery glass house restaurant which sits upon a lake. Situated on the coast in the Matakana Wine Region, the Brick Bay Winery sits upon 200 acres which hosts to a boutique vineyard, an extensive outdoor sculpture trail, an architectural-award winning restaurant and hosts an annual architectural graduate folly design competition.

The evening began with a wine-tasting and cheese platter to discover the boutique and fruity flavours that the Brick Bay winery offer. After the tastings, the team set upon the extensive outdoor sculpture trail which leads the viewer through native bush, many Kauri trees, rolling hills and provides numerous stunning views of not only the surrounding landscape but the surreal setting of the glasshouse restaurant sitting on the lake. Thousands of photos were taken and once completed, the team was seated for a four-course dinner as we enjoyed the place and sunset to ourselves.
